Anthocyanidin synthase (ANS) belongs to the family of
oxidoreductases and participates in flavonoid biosynthesis.
Dihydroflavonols are substrates for the biosynthesis of the
coloured anthocyanin pigments, which are produced in three steps:
firstly a reduction, catalysed by the enzyme dihydroflavonol
4-reductase (DFR); secondly the production of colourless
anthocyanidin through the action of anthocyanidin synthase and
thirdly addition of a glucose residue to produce a coloured
anthocyanin molecule.
