The genetically modified potato plants constitutively express  a serine acetyltransferase gene from Escherichia coli fused to the transit peptide of the small subunit of the ribulose-1,6-bisphosphate carboxylase from Arabidopsis thaliana which leads to the transport of the serine acetyltransferase into the chloroplasts. Here, the serine acetyltransferase catalyses the production of cysteine and glutathion which are antioxidants that are expected to increase tolerance to oxidative stress and heavy metals.
