Leghemobglobin

Leghemoglobin is a protein naturally found in the root nodules of leguminous plants (Marcker et al., 1984). It binds oxygen reversibly through a pentacoordinated heme iron (by similarity). In root nodules, leghemoglobin facilitates oxygen diffusion to bacteroids while protecting bacterial nitrogenase from inactivation by dioxygen, nitric oxide, and carbon monoxide. It also promotes the formation of reactive oxygen species, playing a crucial role in symbiotic nitrogen fixation (SNF) (Garrocho-Villegas, 2007). Additionally, leghemoglobin has been found to mimic meat flavor and aroma in plant-based meat-like products (Reyes et al., 2021).
